Each morning, Shawn and I pack a lunch for the boys. They have a very short period of time to eat lunch and if we pack too much food for them, they don't have time to eat it all. So it's become a challenge to include a healthy, well balanced meal that is easy to eat quickly and also satisfying to taste buds.
Fruit is easy ~ grapes, raisins and blueberries offer a variety of nutrients and are something they eat pretty fast because they love them. Vegetables, however, present more of a challenge. They both like carrots, and that's been what we've mostly included in lunches. I've tried sugar snap peas fresh from the farmer's market, but they didn't care for the taste. I've tried celery, too, but that was definitely not a hit (even with peanut butter on it ~ yum!). Over the weekend we went grocery shopping together and the kids suggested giving broccoli a shot. We got some and I sent it to school with them today.
After school, I asked Tyler if he enjoyed having something other than carrots for his lunch vegetable. He did enjoy the variety but had a problem. "All afternoon" he said, "I kept burping broccoli burps!"
And so, our search continues.

How about cauliflower instead of broccoli?
Do they like cherry/grape tomatoes? Or, lettuce on their cheese sandwiches?

Heh. I am with the kid on that one.
How about saving the veggies for dinner at home, or every other day in lunches, and sending an extra serving of fruit instead? Those 100% fruit dried roll-ups are always a hit with my kids, and they think they are getting a treat but I know better! Then, when you cook in the evenings, you can cleverly hide an extra serving of veggies into the main course and they will never know! ( I do have some great recipes for this, if you would like)
Sounds to me like the school needs to extend lunchtime too! How long do the poor kids have to eat?

Veggies at lunch are a tough one... usually one day is a salad day so we get that, but typically, it's fruit.
I try to get the extra veg in with Juice +!
too cute! give him hugs from us. I would suggest maybe some mini corn or a V8 low sodium style of course. They sell the small cans that fit perfectly in lunch boxes. I know it is no the ideal but it does give something. I have gotten George into the veggie chips too. It is a fairly healthy snack that he likes. Love to the fam.
Broccoli burps sucks. I don't like them either or maybe it's the broccoli that doesn't like me.
Carrots seem to be the only veggie I can consistently give the kids in their lunch. Boring I know. However they like lots of different kinds of fruit. Strawberry, apple, banana, oranges, cantalope, etc.
How about cucumber?
Once again, he makes a might fine oint! What about carrots and some low-fat dip to entice?

LOL on the broccoli burps. we're in the same dillema here as well. the girls consistently get cut up cucumbers for the veggie in their lunch. i seriously lack creativity in this area.
